Taco Casserole

I have become obsessed with casseroles. I used to think there was only one type… canned ham, mushroom soup, and cheese. My mothers specialty. My dreaded night to eat dinner as a kid. But hey turns out you can cook anything in a casserole dish… and it makes for great left overs. 

*Side note - mom if you’re reading this I love you dearly!*

Anyways may I present to you Taco Casserole. 

First Layer - Ground turkey cooked with sauted onions and taco seasonings
Second Layer - Cooked rice
Third Layer - Black beans rinsed and washed
Forth Layer - Diced tomatoes
Fifth Layer - Light cheddar cheese and chives from my garden.

I stuck it in the oven at 350 for about 20 minutes and loved it! I made two as well so we had one for lunches. mmmmmhmmmm
