Butternut Squash Fries
Who here loves loves loves butternut squash? I am fairly sure I am the only one in this house that eats it. More for me! Anyways, these make excellent chips, or french fries depending on where in the world you are living.
They are super easy to make. Peel the squash and cut it up into chip shaped pieces. Place them in a mixing bowl. Add one tablespoon oil (1pt) and any spices you want. We usually use chicken rub or steak rub. However salt and pepper works just as well. Bake them in the oven for about 20-30 minutes. After they are soft and baked I then broil them for about 15 minutes to crisp them up.
Butternut squash is 0 points. The oil is 1. So super low in points and super delicious. Lots of doctors recommend them for a cholesterol lowering diet. They are also high in anti-oxidants, and yummy.
