Artichokes

Because I ate these last week I decided to do a little research.. here is what I found…

Health Benefits of eating artichokes:

  • Cardiovascular health - the high quantities of potassium in the vegetable help to maintain normal heart rhythm.Parts of the vegetable help to lower bad cholesterol levels and reduce the risk of stroke and cardiovascular disease.
     
  • Immunity - the artichoke is rich in phytonutrients and antioxidants. This helps to boost the body’s immunity against diseases.
     
  • Digestion – the vegetable is rich in dietary fiber which we all know keeps things flowing…
     
  • Blood health - fiber helps to lower blood cholesterol, stabilizes blood sugar levels and lessens the risk of heart disease. High fibre is also great to feel full. 
     
  • Bone and muscle health -Jam packed with vitamin C 

It is the eaaasssiest to cook… literally. Steam it serve it eat it

Pickles

Pickles are probably one of my favorite foods, and if it weren’t for the high sodium I think I would eat them everyday for every meal.

Pickles are a good source of Vitamin A B and K, and only 90 calories per cup.

What I like best about them is you get that crunchy salty craving satisfied. Move over potatoe chips I have found pickles. 

Also Cleopatra claimed it was pickles that made her so beautiful.

Realization Day

Hey lovely followers! This week was a great week. I got back into my blog and am on vacation. YAY. I am in a city in Canada called Kelowna, on a lake, with a boat, in my bikini. Yes bikini and it feels so amazing. I have even had a few people say ‘Oh I remember when I was that skinny.’ At first I was like ‘ummm what are you talking about I am really not that fit…’ But guess what?!?! I AM. Just took me walking in almost no clothing around a whack of people for me to finally let it sink in. It was a great feeling. 

I HAVE WORKED FOR THIS AND NOW IM GOING TO WORK IT!

Stampede Pancake Breakfast

Ok so for you followers not from Canada… we here in Calgary have a giant rodeo every year…’the greatest outdoor show on Earth.’ And there is free pancake breakfasts everywhere. So I thought I would make blueberry pancakes in celebration. 

  • 1 cup whole wheat flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 large egg, slightly beaten
  • 2 tablespoons vegetable oil
  • milk, just enough to make pourable batter
Preparation:

Combine dry ingredients. Stir in egg, oil, and enough milk for batter to pour easily. Mix lightly to blend. Cook pancakes on a hot, well greased griddle. This recipe for pancakes makes 2 to 3 serving. 

Then I add blue berries as they’re cooking and serve with nutella. mmmmm cheat breakfast.

Project Positive - Repeat

Back in Action

Hey everyone!

I am terrible I know, these last two weeks of my life have been absolutely mental. My boyfriend’s friend came and stayed with us for a week and a bit, it was stampede week, and working two jobs. FUN TIMES. Ok so it was actually really fun… whats even more fun is I finally saw 139.9 on the scale. what what. Now I have wiggle room to have some fun on holidays. Which I leave for tomorrow! I have my running shoes packed, my weights, and resistance bands… here is to two weeks of sun, wakeboarding, and running. Can’t wait! 

But my posts will be continuing while I am away! Except for Mondays… because no one is emailing me project positive pictures… That was a hint for everyone.
